Went to Vaps last night just before close. They know me as a semi-regular, and they offered me a free pastry and, after I ordered some bread to go, the cook threw in some extra because he made too much. Theyre not the only ones that do such things. If you sit at the kitchen bar in Valley, the chefs give you samples. At Dickeys, they know I like burnt ends off brisket, so they give me the bark (burnt ends is not a menu option for the chain). The owner at Valpo Viennas often gives samples of whatever hes considering adding to the menu -- or of soup of the day. I know that Bistro 157s bartender used to let customers waiting on to-go orders sample some of the new stuff. I dont go back to these places for the samples or freebies, but I go back because I like the attitude they have towards their customers -- that were guests that they want to return.
