Bubbys Blueberry Compote Makes 1½ cups This signature sauce compliments many items at Bubby’s brunch. It’s wonderful with pancakes and waffles! You can substitute blackberries, strawberries or just about any berry for the blackberries with excellent results. Be sure to use freshly squeezed orange juice and freshly grated orange zest in this compote. Alternatively, especially if you make this with other berries, lemon is a good substitute for the orange. If you want to get crazy, try it with grapefruit. The compote can be made a couple of days in advance if you like, and stored in the refrigerator. Before serving, heat the compote over low heat until it is very hot. Ingredients: 2 cups fresh blackberries, picked over for bad berries and leaves 4 tablespoons sugar 1 tablespoon fresh orange juice ½ teaspoon freshly grated orange zest Instructions: 1. In a heavy, 1-quart saucepan, stir together the blackberries, sugar, orange juice and orange zest. 2. Set the saucepan over medium heat. Bring the mixture to a simmer, reduce the heat to low, and allow it to simmer for 5-10 minutes, or until it coats the back of a spoon. 3. Spoon the compote into a serving dish. If storing for later use, cool the compote completely before covering it with a lid or plastic wrap. If the compote is cool, reheat it over low heat to serve warm. Enjoy!
