What to do on a cold and dreary day. My old sidekick, Dusty Trails, and I fixed up a batch of High Plains Cinnamon n Raisin Biscuits. The recipe is as follows. High Plains Cinnamon ‘n Raisin Biscuits 2 cups of self-rising flour 2 teaspoons of baking powder 1 teaspoon of salt 1 teaspoon of baking soda 1/3 cup of granulated sugar 1 teaspoon of cinnamon 1/3 cup of raisins ¾ cup of milk ½ cup of vegetable shortening In a large mixing bowl combine flour, baking powder, baking soda, salt, sugar and cinnamon. Thoroughly mix dry ingredients, and then cut in shortening with a pastry blender, and mix until ingredients become coarse granules. Pour in milk in small amounts and stir flour mixture with a fork. Continue adding the milk until the dough just starts to pull away from the mixing bowl. At this point add in the raisins and mix by hand. Knead the dough at least 8 times, by folding the dough in half and rotating it by a quarter of turn each time. On a lightly floured board roll out the dough to a thickness of about a ½ inch thickness. When the biscuits are done they should have risen to about a one inch thickness. This makes approximately 10 biscuits. Bake biscuits on 450 degrees for about 12 minutes. When cooled add a confectioners sugar glaze to the biscuits. Compliments of Dusty Trails, The Cowboy Chef
