Your local butchershop is the best place to source a specific cut of meat, game or poultry to pull your recipe together. But butchers’ jargon can be confusing, even intimidating to food shoppers. Butchery can be confusing but with a little bit of research and anatomical consideration it becomes clear that all animals are essentially engineered the same but differ only in size and technical names of each cut.
