Yum! I was very critical with the taste and texture, expecting to find a tangy or tart undertone to the meat, but was surprised to find that it was very mild. Some underdone pieces were a bit chewy, (I like my meat very rare :) but most were surprisingly tender. The beef heart recipe was divine, this specific recipe asked to marinate the heart which I believe contributed to its fantastic taste. The author was correct when stating that it could easily be mistaken as a flank steak.This has become, by far, one of my favorite recipes.
