......continued from yesterdays dinner post {healthy and easy chicken and lentil soup} ~Place your roast chicken juices and fats in a soup pot ~add some of your left over chicken roughly diced ~add half a cup of dried lentils ~I used 1 clove of garlic, 1 onion and basil plus 2 tomatoes and 2 eggplants diced up, but you can really go crazy and add any of your favourite vegetables and herbs here ~add enough water to cover all your soup ingredients ~bring to the boil then simmer for an hour or so with the lid on to keep all the flavours in ~season with salt and pepper if needed plus add any other fresh herbs ~add a side salad to make it a complete meal ~there you have protein from the chicken and lentils, carbs from the lentils and cooked veggies, fats from the roast chicken and colours from the salad. ~if you dont have much roast chicken left and you want to add more protein, throw some eggs in to cook while the soup is boiling just before serving. ~enjoy
