for Cindy- a recipe for fried chicken. From a cookbook written and published in 1969, by Billie Belle Wilson, who was married to Hugo Wilson, who was brought up with your Dad in Coldwater.---Melt enough shortening in skillet to be 1 inch deep. Have shortening hot (375 to 400 degrees). Put 1 cup flour in paper bag. drop chicken pieces in bag. Close top, shake until well coated. Drop chicken one piece at a time into hot shortening, put on lid, cook till brown on one side. Turn chicken reduce heat one notch and continue cooking until brown on that side. Remove and drain on paper towel. To make gravy, pour off shortening, all but 2 T. Leave crumbs of chicken in skillet, add 2T. flour,1/2 t. salt, a dash of pepper and 2 and 1/2 C. sweet milk.
