one of the things i am making today. Cant attest for the taste as i am allergic but everyone i have made them for loves them. Stuffed mushrooms: 1 pound baby portabellos, 1 pound chicken sausage, fine diced white onion, feta cheese, 12 cup whole wheat breadcrumbs,all purpose greek seasoning,1 tablespoon eggbeaters,1 tablespoon minced garlic olive oil. Wash mushrooms and with a plastic spoon scoop out stem area. Process the pieces or fine dice and throw in a bowl. Brown and drain sausage and add to bowl. Add everything else but olive oil.mix well and press into centers of mushrooms. Brush mushroom tops with olive oil and either bake at 325 for 30 minutes or grill for five minutes.
